陈秋铭,我校食品科学与技术国家重点实验室、我院副研究员,硕士生导师,主要从事食品酶高效挖掘、定向分子改造与功能性蛋白质配料生物制备研究,借助以分子动力学模拟技术为主导的计算机技术,进行新型食品酶、功能性蛋白质的构效解析,为食品配料的高效生物制备提供理论依据和技术指导。主持国家自然科学基金青年基金、江苏省自然科学青年基金等科研项目;以第一/通讯作者在Trends Food Sci Tech、Crit Rev Food Sci Nutr、J Agric Food Chem、J Dairy sci等期刊发表SCI论文10余篇,编著英文著作1部(共同主编)。
